When someone asks what recipes have come from Wales, you can proudly give this one to them. They are really simple to make and magnificent if eaten still hot!

I’ve adjusted the ingredients just slightly as us chefs do, (we like to make a mark see) by replacing some of the caster sugar with a bit of demerara sugar. This adds a lovely layer of molases to the flavours.

Shopping List

  • Self Raising Flour: 225g
  • Egg: 1
  • Butter: 110g
  • Caster Sugar: 55g
  • Demerara Sugar: 55g
  • Sultanas: 110g
  • Cinnamon: 1tsp

Cooking Instructions

  1. Rub butter, cinnamon and flour together until fully incorporated.
  2. Add the sugar andĀ sultana’sĀ and mix well
  3. Add the egg to bind the mix.
  4. Roll out to 1cm thick and cut rounds out.
  5. Cook on a heavy based pan with a bit of butter for 3 minutes on each side.
