Almond & Polenta Cake (Gluten-free)

It seems that more and more people are suffering from being gluten intolerant, so this recipe uses polenta which is made from ground cornmeal and contains none of the gluten that you would find in wheat. The polenta also gives the cake a rich yellow glow is an absolute winner when trying to impress!

With almonds replacing the flour, it gives the cake a fantastic flavour and texture you just couldn’t get from a wheat cake.

Shopping List

  • Local Butter: 225g
  • Fair Trade Sugar: 225g
  • Free Range Eggs: 3
  • Ground Almonds: 200g
  • Polenta: 120g
  • Gluten Free Baking Powder: 1tsp

Cooking Instructions

1. Cream butter & sugar together

2. Mix the polenta, almonds and baking powder together in a separate bowl

3. Beat the eggs and add to the butter and sugar mixing well

4. Add the dry mix to the wet mixing well

5. Pour into greased and lined square baking tray that’s about 1cm high.

6. Pop into preheated oven (180 celsius)

7. Make yourself a cup of tea and relax for 20 minutes

8. Check cake is done by inserting skewer into middle of cake – if it comes out clean, pull the cake out of the oven and let it cool.

9. To serve, cut into square or rectangles.
