All I can do is apologize for my sudden disappearance from Riverside Market last year. I had a lot of support from my customers from the word go and I feel I owe a bit of an explanation as to why I left.

I had left my job in Milgi’s to go full time on EthicalChef only to realise that most of my work was not bringing in any revenue (recipes, blog posts, gardening, investing in new equipment, meeting suppliers) and with renting a one bed flat, a commercial kitchen, the cost of running a car and the initial outlay of the business, the 4 hours I had on Riverside Market just wasn’t enough time to make that money back! Slowly but surely I knew I was sinking but I really didn’t want to let go. Inevitably I did, I moved to Carmarthen where I got a job in a local restaurant as a Chef and just put my head down and worked to pay off my debts and save.

So here I am, almost exactly a year later from when I left! This time things are going to be different: I’m using the kitchen in my own house rather than renting a commercial one, I work part time on Blaencamel Organic Farm in exchange for their vegetables and my business plan is to run monthly Supper Clubs and also trial out “ready made meals” for people to take home for those lazy days we all have when you just want to throw something in the oven and come back 20 minutes later when it is all done.

This will enable me to continue to use top quality ingredients without the worry of the waste at the end of the market. But don’t worry, I will still be selling hot food, I’ve got a 3 course menu planned for my first day back so don’t eat too much before you come and see me!

Also, all our flour is from Bacheldre Watermill in Mid Wales and all our sugar and chocolate is Fair Trade.
