Vegetarian Christmas Pudding

Here at the EthicalChef Kitchen we have decided to publish our favourite Vegetarian Christmas pudding recipe. It’s had many a discussions over various different stouts but we think we’ve come up with a recipe that will tempt even the most sceptical pudding eaters.
We will be selling our puddings on the Riverside Market all through December and are also taking pre-orders to make your Christmas dinner that little but easier.

Shopping List

  • Veggie Suet: 100g
  • SR Flour: 50g
  • Breadcrumbs: 100g
  • Mixed Spices: 1tsp
  • Nutmeg: 1/2 tsp
  • Cinnamon: 1/2 tsp
  • Dark Brown Sugar: 200g
  • Sultanas: 100g
  • Raisins: 100g
  • Currants: 300g
  • Cooking Apple: 1 grated
  • Orange Zest: 1
  • Lemon Zest: 1
  • Stout: 150ml
  • Eggs: 2 large

Cooking Instructions

It’s quite a long winded method but dont get put off by it, just make sure you have all your ingredients already weighted out in little bowls and tick them off as you go along so you dont forget anything.  Remember to make this mix the day before you are actually planning to cook it.

Method

  1. Find yourself a bigger than usual mixing bowl, add the vegetarian suet, flour, breadcrumbs, spices and sugar, mixing them together.
  2. Then add the dried fruit, apple and zest.
  3. In a separate bowl add the stout & eggs and mix well before pouring into the first bowl, giving a good mix and a festive wish.
  4. Leave overnight at this stage.
  5. Grease your basin and line with baking parchment, fill to the brim and cover with foil tying in shut (easier said than done).
  6. Steam your pudding for 8 hours, making sure the water doesn’t dry out.
  7. Leave to cool and remove.

NB – Check your stout is suitable for vegetarians, surprisingly a lot of it isn’t.
