Vegan Courgette Cake

A great cake that always gets baked when it’s raining courgettes. Also excellent if you have any vegan friends to impress.

Shopping List

  • grated courgette: 500g
  • mashed ripe bananas: 2
  • Margarine: 240g
  • Plain Flour: 360g
  • Sugar: 400g
  • Salt: 1 teaspoon
  • Baking Powder: 1 teaspoon
  • Cinnamon: 1 teaspoon
  • Vanilla Extract: 1 teaspoon

Cooking Instructions

  1. Place grated courgette on a tea towel and squeeze as much of the moisture out as you can.
  2. Mix the courgette, bananas, margarine and vanilla in a mixing bowl.
  3. One by one add the dry ingredients to the wet.
  4. Pour into a greased tin and bake at 180 degrees celsius for 30 minutes until completely set.
  5. Leave to cool on a cooling rack.
