Warm Soft Chocolate Fondant

70% Fairtrade Dark Choc:250g
Fairtrade caster sugar:300g
Butter ramekins and dust with cocoa powder to prevent sticking.
Melt butter and chocolate until melted.
Mix sugar and eggs together, being careful NOT to over whisk.
Fold chocolate mixture into eggs
Add flour to the mix and fold until fully incorporated.
Pour mixture into ramekins leaving 1cm from the rim.
Cook at 190 celsius for 10 minutes (DO NOT OVERCOOK)
Leave to rest for one minute then overturn and serve with ice cream or creme fraiche
