Apple Crumble Cake

Great twist of the traditional apple crumble, this recipe allows you to get the sensation of eating a layer of apple crumble topping on a base of a sponge cake. Try and use apples local to your area as these are always the best tasting. Im using cookers as I love the sourness of them but feel free to use any of your favourite.

- Large Apple: 2
- Ground Cinnamon: 2Tsp
- Caster Sugar: 250g
- Butter: 250g
- Sultanas: 50g
- SR Flour: 250g
- Free Range Eggs: 4
Cooking Instructions
Method
Line your tin (10in x 10in) and preheat your oven to 180 Celcius
Peel, core and slice your apples placing them in a bowl with half of the cinnamon, give it a mix and set to one side.
Make your crumble topping with 50g butter, 50g sugar and 50g flour. Mix together with your fingers to make a rough crumble and set aside.
Put sugar and butter in a bowl and mix till nice and light, add the eggs continuing to mix, then add the flour, sultanas and cinnamon before adding to you lined tin.
Spread the apples over the top of the mix then cover with the crumble mix and pop in the oven for 25 mins.
